Zoodle Pad Thai:

- 1 red bell pepper, thinly sliced
- 1 carrot, julienned

- Fresh cilantro and lime wedges, for garnish
Peanut Sauce:
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- Water to thin as needed
Instructions
- Peanut Sauce: Mix all peanut sauce ingredients in a bowl. Add water to thin to desired consistency.
- Cook Vegetables: Heat sesame oil in a skillet. Add red pepper and carrot; cook for 3-4 minutes.
