Ingredients:
1 lb large sea scallops
Salt and pepper to taste
2 tablespoons olive oil
3 tablespoons unsalted butter, divided
4 cloves garlic, minced
1/4 cup fresh lemon juice
1/4 cup chicken or vegetable broth
2 tablespoons chopped fresh parsley
Lemon slices, for garnish
Directions:
Prep the Scallops: Pat the scallops dry with paper towels and season both sides with salt and pepper.
Sear the Scallops: Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the scallops to
the skillet and sear for 2-3 minutes on each side, until a golden crust forms. Remove the scallops from the skillet and set
aside.
Make the Sauce: In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté for about
30 seconds, until fragrant. Pour in the lemon juice and broth, scraping up any browned bits from the bottom of the skillet.
Let the sauce simmer for 2 minutes.
Return the Scallops: Return the seared scallops to the skillet and cook for another minute, basting them with the sauce.
Garnish and Serve: Sprinkle the chopped fresh parsley over the scallops and garnish with lemon slices. Serve immediately
