With fresh berries, juicy watermelon, and a tart dressing to balance the sweetness, your guests will thank you at your next outdoor BBQ. Fresh lime and mint elevate the flavors, making it the most delicious fruit salad of the season!


Ingredients

Salad:

  • 4 cups watermelon, cubed into 1-inch pieces
  • 1 1/2 cups strawberries, sliced into rounds
  • 1 1/2 cups raspberries
  • 1 1/2 cups cherries, pitted and halved

Dressing:

  • 2 tbsp freshly squeezed lime juice
  • 1 1/2 tsp lime zest
  • 2 tbsp agave syrup
  • 1 tbsp fresh mint, finely chopped

Instructions

  1. Whisk together agave, lime juice, lime zest, and mint.
  2. Combine agave syrup, lime juice, lime zest, and fresh mint in a bowl.

  3. Prep watermelon and berries and place in a large bowl. Drizzle dressing over top and lightly toss.
  4. Cube watermelon, slice strawberries, halve cherries, and place all fruits in a bowl. Pour the dressing over the fruits and gently mix.

  5. Garnish with some torn mint.

Notes

  • Not a fan of mint? This salad is also delicious with fresh basil!
  • If you have a cherry pitter, use it for easier prep. Otherwise, a chopstick works well to remove cherry pits.
  • For best results, consume the salad immediately as it may become soggy if stored for long.
  • You can substitute agave with honey or maple syrup as a sweetener.
