  • Salt & pepper, to taste

For the cheese sauce:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/4 cups milk (any kind)
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 tsp mustard powder (optional)
  • 1 1/2 cups shredded sharp cheddar cheese
  • Salt & pepper, to taste

Optional toppings:

  • Fresh chopped chives
  • Crushed red pepper or smoked paprika

Instructions

  1. Roast the cauliflower: Preheat oven to 400°F (200°C). Toss cauliflower florets in olive oil, season with salt and pepper, and roast for 20–25 minutes until golden and tender.
  2. Make the cheese sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly whisk in milk until smooth. Add garlic powder, paprika, and mustard powder. Simmer until thickened (3–4 minutes).
  3. Add cheese: Turn off the heat and stir in shredded cheese until fully melted and creamy. Season to taste.
  4. Combine: Pour cheese sauce over roasted cauliflower and stir to coat.
  5. Serve: Top with chives, red pepper flakes, or paprika if desired.
