- Salt & pepper, to taste
For the cheese sauce:
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 1/4 cups milk (any kind)
- 1/2 tsp garlic powder
- 1/4 tsp paprika
- 1/4 tsp mustard powder (optional)
- 1 1/2 cups shredded sharp cheddar cheese
- Salt & pepper, to taste
Optional toppings:
- Fresh chopped chives
- Crushed red pepper or smoked paprika
Instructions
- Roast the cauliflower: Preheat oven to 400°F (200°C). Toss cauliflower florets in olive oil, season with salt and pepper, and roast for 20–25 minutes until golden and tender.
- Make the cheese sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly whisk in milk until smooth. Add garlic powder, paprika, and mustard powder. Simmer until thickened (3–4 minutes).
- Add cheese: Turn off the heat and stir in shredded cheese until fully melted and creamy. Season to taste.
- Combine: Pour cheese sauce over roasted cauliflower and stir to coat.
- Serve: Top with chives, red pepper flakes, or paprika if desired.
