Instructions
- Preheat oven: Preheat oven to 350 degrees F. Spray an 8 or 9-inch loaf pan with non-stick cooking spray.
- Mix dry ingredients: In a medium-sized bowl, stir together flour, baking powder, and salt.
- Mix wet ingredients: In a separate large mixing bowl, mix Greek yogurt, sugar, eggs, almond extract, and oil. Slowly stir in the dry ingredients until just incorporated.
- Add strawberries: Fold in the diced strawberries and spoon the batter into the prepared pan.
- Bake: Bake for about 50 minutes or until the center is set.
- Cool: Remove from the oven and let sit for 10 minutes, then turn out onto a cooling rack to cool completely.
- Make glaze: While the cake is cooling, make the glaze by combining smashed strawberries and powdered sugar in a medium-sized bowl.
