These irresistible mini desserts combine the warm cinnamon-sugar flavor of snickerdoodle cookies with gooey apple pie filling, all packed into a tender cookie cup—perfectly portioned for snacking, parties, or cozy autumn cravings.

  • 1 teaspoon ground cinnamon (for cinnamon sugar mixture)
  • 1 1/2 cups apple pie filling, chopped finely if chunky (for filling)
  • Optional: extra cinnamon for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a mixing bowl, cream together butter and sugar until light and fluffy. Add egg and vanilla, mixing until combined.
  3. In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt. Gradually add to wet ingredients and mix until well combined.
  4. In a small bowl, combine the sugar and cinnamon for rolling.
  5. Scoop 1 tablespoon of dough, roll into a ball, coat in cinnamon sugar, and press into each muffin cup, creating a well in the center.
  6. Bake for 10–12 minutes or until edges are set and lightly golden.
  7. Remove from oven and use the back of a spoon to press the center again if needed.
  8. Let cool slightly, then fill each cookie cup with 1–2 teaspoons of apple pie filling.
  9. Sprinkle with more cinnamon if desired and serve warm or at room temperature.

Notes

  • Use pre-made apple pie filling for convenience or make your own by cooking down apples with sugar, cinnamon, and lemon juice.
  • For a twist, add chopped nuts or caramel drizzle on top of the apple pie filling.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
