Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin pan.
- In a mixing bowl, cream together butter and sugar until light and fluffy. Add egg and vanilla, mixing until combined.
- In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt. Gradually add to wet ingredients and mix until well combined.
- In a small bowl, combine the sugar and cinnamon for rolling.
- Scoop 1 tablespoon of dough, roll into a ball, coat in cinnamon sugar, and press into each muffin cup, creating a well in the center.
- Bake for 10–12 minutes or until edges are set and lightly golden.
- Remove from oven and use the back of a spoon to press the center again if needed.
- Let cool slightly, then fill each cookie cup with 1–2 teaspoons of apple pie filling.
- Sprinkle with more cinnamon if desired and serve warm or at room temperature.
Notes
- Use pre-made apple pie filling for convenience or make your own by cooking down apples with sugar, cinnamon, and lemon juice.
- For a twist, add chopped nuts or caramel drizzle on top of the apple pie filling.
- Store leftovers in an airtight container at room temperature for up to 3 days.
