Ingredients

  • 70g hard cheese, finely grated
  • 45g rolled oats
  • 100g cold unsalted butter, diced
  • 1/41/2 tsp salt (adjust to taste)
  • 1 egg yolk
  • 20ml ice-cold water
  • 150g cream cheese
  • 150g ricotta cheese
  • 100g cold-smoked trout, finely chopped
  • 1 tbsp lemon juice
  • Zest of 1 lemon
  • Pinch of garlic powder (optional)
  • White pepper to taste
  • Small bunch of parsley, finely chopped

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a large bowl, combine flour, oats, grated cheese, and salt.
  3. Add cold butter and rub in until the mixture resembles coarse crumbs.
  4. Stir in the egg yolk and ice water, mixing just until dough comes together.
  5. Shape dough into a disc, wrap in cling film, and refrigerate for at least 30 minutes.
  6. Roll out dough on a floured surface to 1/4-inch thickness and cut out cookies.
  7. Place cookies on the tray and bake for 12–15 minutes until golden at the edges.
  8. Cool cookies on a wire rack.
  9. Blend cream cheese and ricotta until smooth.
  10. Fold in trout, lemon juice, zest, garlic powder, white pepper, and parsley.
  11. Serve cookies warm or at room temperature with the smoked trout cream.

  • Adjust salt in the cookie dough depending on the saltiness of the cheese.
  • Refrigerating the dough helps with handling and texture.
