Instructions

  1. Preheat the oven: Preheat your oven to 180°C (350°F) and butter your ramekins well.
  2. Melt the chocolate and butter: In a heatproof bowl set over a saucepan of simmering water, melt the dark chocolate and butter together, stirring occasionally until smooth.
  3. Whisk the eggs and sugar: In a separate bowl, whisk the eggs, egg yolks, and caster sugar together until the mixture is pale and fluffy.
  4. Combine the mixtures: Slowly fold the egg mixture into the melted chocolate and butter mixture. Add in the rum and mix until smooth.
