- 1 1/2 lbs ground beef (85/15 recommended)
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 2 eggs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried parsley
- For the glaze:
- 1/3 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, combine ground beef, breadcrumbs, milk, onion, garlic, eggs, Worcestershire sauce, salt, pepper, and parsley. Mix just until combined—don’t overwork it.
- Shape the mixture into a loaf on the prepared sheet or press it into the loaf pan.
- In a small bowl, mix ketchup, brown sugar, and Dijon mustard. Spread half the glaze over the top of the loaf.
- Bake for 40 minutes. Remove, spread remaining glaze, and bake for another 15–20 minutes or until internal temperature reaches 160°F (71°C).
- Let rest for 5–10 minutes before slicing. Serve with mashed potatoes or green beans.
Notes
- Use a meat thermometer to ensure perfect doneness at 160°F (71°C).
- Don’t overmix the meat mixture to maintain a tender texture.
- Leftovers make great meatloaf sandwiches the next day.
