Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch square baking dish.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Alternately add the flour mixture and milk, mixing just until combined.
  6. Pour batter into prepared baking dish and bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
  7. In a bowl, dissolve gelatin in 1 cup boiling water. Stir in 1/2 cup cold water and let cool slightly.
  8. Add chopped apples and food coloring if using to the gelatin mixture.
  9. Pour the apple gelatin mixture evenly over the cooled cake base.
  10. Refrigerate for 4–6 hours or until fully set.
  11. Slice into squares and top each slice with whipped cream before serving.
