Scale
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1/4 cup Dijon mustard
- 1/4 cup maple syrup
- 1 tablespoon apple cider vinegar
- 1 tablespoon soy sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground thyme
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/2 cups milk
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
Instructions
- Prepare the chicken: Season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side, until golden brown and cooked through.
- Make the glaze: While the chicken cooks, whisk together the Dijon mustard, maple syrup, apple cider vinegar, soy sauce, garlic powder, and thyme in a small bowl.
- Once the chicken is cooked, pour the glaze over the chicken and cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the chicken.
- Prepare the waffles: In a large bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Preheat your waffle maker and cook the batter according to the manufacturer’s instructions.
- Assemble the dish: Place the cooked waffles on plates. Top each waffle with a piece of the mustard and maple glazed chicken. Drizzle any extra glaze over the top and serve immediately.
Notes
- This dish can be served with extra maple syrup or fresh herbs for added flavor.
- If you prefer a spicier version, you can add a pinch of cayenne pepper to the glaze.
- For a crispier chicken, you can coat the chicken breasts with breadcrumbs or a light batter before cooking.
