Description

A delicious fusion of savory and sweet, featuring crispy chicken breasts glazed with a tangy mustard and maple syrup sauce, served atop fluffy waffles. A perfect dish for breakfast or dinner that brings together the best of both worlds!

Ingredients

Units Scale
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/4 cup Dijon mustard
  • 1/4 cup maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground thyme
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/2 cups milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side, until golden brown and cooked through.
  3. Make the glaze: While the chicken cooks, whisk together the Dijon mustard, maple syrup, apple cider vinegar, soy sauce, garlic powder, and thyme in a small bowl.
  4. Once the chicken is cooked, pour the glaze over the chicken and cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the chicken.
  5. Prepare the waffles: In a large bowl, whisk together the flour, baking powder, and salt.
  6. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until smooth.
  7. Pour the wet ingredients into the dry ingredients and stir until just combined.
  8. Preheat your waffle maker and cook the batter according to the manufacturer’s instructions.
  9. Assemble the dish: Place the cooked waffles on plates. Top each waffle with a piece of the mustard and maple glazed chicken. Drizzle any extra glaze over the top and serve immediately.

Notes

  • This dish can be served with extra maple syrup or fresh herbs for added flavor.
  • If you prefer a spicier version, you can add a pinch of cayenne pepper to the glaze.
  • For a crispier chicken, you can coat the chicken breasts with breadcrumbs or a light batter before cooking.
