Description

A classic French pastry featuring layers of golden, flaky puff pastry and silky vanilla pastry cream, topped with whipped cream, candied fruit, lime zest, and a delicate edible flower — an elegant and refined dessert.

  • 1 sheet puff pastry, thawed if frozen
  • 1 tbsp powdered sugar (for dusting)
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 1/4 cup cornstarch
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter
  • 1/2 cup whipped cream
  • 2 tbsp diced candied pineapple or mango
  • Zest of 1 lime
  • Edible flowers (orchid recommended)

Instructions

  1. Preheat oven to 400°F (200°C). Roll out puff pastry and cut into rectangles (about 3×1.5 inches). Place on a baking sheet lined with parchment paper.
  2. Prick with a fork and dust with powdered sugar. Place another baking sheet on top to prevent puffing.
  3. Bake for 15–20 minutes until golden and crisp. Cool completely.
  4. For pastry cream, heat milk in a saucepan until steaming. In a bowl, whisk egg yolks, sugar, and cornstarch. Slowly pour in hot milk while whisking.
  5. Return to saucepan and cook over medium heat, whisking constantly until thickened. Remove from heat and stir in vanilla and butter. Let cool completely.
  6. Transfer pastry cream to a piping bag. Pipe onto one layer of puff pastry, top with another pastry layer, and repeat. Finish with a third layer on top.
  7. Pipe small dollops of whipped cream and decorate with candied fruit and lime zest.
  8. Garnish the plate with an edible flower and serve chilled.

Notes

  • Chill pastry cream fully before assembling to prevent melting.
  • Use a serrated knife to cut through layers neatly without squishing the filling.
  • Make ahead and refrigerate up to 1 day before serving for best texture.
