Instructions
- In a small mixing bowl or jar, whisk together the Meyer lemon juice, Dijon mustard, minced garlic, honey, salt, and pepper.
- Slowly drizzle in the olive oil while whisking constantly, or seal the jar and shake vigorously until the dressing is emulsified and creamy.
- Taste and adjust seasoning if needed.
