Description

Tender, pan-seared salmon fillets smothered in a rich and creamy sun-dried tomato parmesan sauce, infused with garlic, shallots, fresh basil, and a touch of spice—ideal for an elegant yet comforting dinner.


Ingredients

  • 4 salmon filets (skin on or off)
  • 2 tsp olive oil
  • 2 tbsp butter
  • 1 shallot, finely diced
  • 4 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy whipping cream
  • 3/4 cup parmesan cheese, grated
  • 1/4 cup fresh basil, chopped
  • 1 tsp dried thyme
  • 2 1/2 tbsp Creole seasoning
  • 1 tsp crushed red pepper
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Season the salmon filets on both sides with Creole seasoning, salt, and pepper.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Sear the salmon for 4–5 minutes per side until golden brown and just cooked through. Remove from pan and set aside.
  4. In the same skillet, sauté the shallots and garlic for 1–2 minutes until fragrant.
  5. Add the sun-dried tomatoes and thyme, cooking for another minute.
  6. Deglaze the pan with chicken broth, scraping up any browned bits.
  7. Stir in the heavy cream and bring to a gentle simmer.
  8. Add parmesan cheese and stir until melted and the sauce is smooth.
  9. Mix in the fresh basil and crushed red pepper flakes. Simmer until slightly thickened.
  10. Return the salmon to the pan, spoon sauce over the filets, and simmer for 2–3 minutes until heated through.
  11. Serve hot, plated individually with extra sauce on a white dish.

Notes

  • Use skinless or skin-on salmon depending on preference; sear skin-side down first if using skin-on.
  • Adjust the spice level by reducing or increasing the crushed red pepper.
  • Serve with mashed potatoes, pasta, or steamed vegetables for a complete meal.
  • For a lighter version, substitute half-and-half for heavy cream.
