Description

A rich, gooey take on the classic Canadian butter tart, this pie version features golden maple syrup, plump raisins, and a flaky homemade crust for the ultimate indulgent dessert.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 cup (2 sticks) cold butter, cubed
  • 1/4 cup ice water
  • 3/4 cup raisins
  • 4 large eggs
  • 3/4 cup brown sugar
  • 3/4 cup pure maple syrup
  • 1/2 cup dark corn syrup
  • 1/2 cup melted butter
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. To make the crust, mix flour and salt in a bowl. Cut in butter until mixture resembles coarse crumbs. Add ice water a tablespoon at a time until dough holds together. Form into a disk, wrap, and refrigerate for 30 minutes.
  3. Roll out dough and fit into a 9-inch pie plate. Trim and crimp the edges. Chill while preparing filling.
  4. Sprinkle raisins evenly over the bottom of the pie shell.
  5. In a large bowl, whisk together eggs, brown sugar, maple syrup, corn syrup, melted butter, and vanilla extract until well blended.
  6. Pour the mixture over the raisins in the pie crust.
  7. Bake for 45–50 minutes, or until the filling is set and the top is golden brown.
  8. Allow to cool completely before slicing for clean cuts. Serve at room temperature or slightly warm.

Notes

  • Substitute chopped pecans or walnuts for raisins if preferred.
  • For a firmer filling, slightly reduce the amount of syrup used.
  • Pie can be made a day ahead and stored at room temperature.
