- 2 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1 cup (2 sticks) cold butter, cubed
- 1/4 cup ice water
- 3/4 cup raisins
- 4 large eggs
- 3/4 cup brown sugar
- 3/4 cup pure maple syrup
- 1/2 cup dark corn syrup
- 1/2 cup melted butter
- 2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- To make the crust, mix flour and salt in a bowl. Cut in butter until mixture resembles coarse crumbs. Add ice water a tablespoon at a time until dough holds together. Form into a disk, wrap, and refrigerate for 30 minutes.
- Roll out dough and fit into a 9-inch pie plate. Trim and crimp the edges. Chill while preparing filling.
- Sprinkle raisins evenly over the bottom of the pie shell.
- In a large bowl, whisk together eggs, brown sugar, maple syrup, corn syrup, melted butter, and vanilla extract until well blended.
- Pour the mixture over the raisins in the pie crust.
- Bake for 45–50 minutes, or until the filling is set and the top is golden brown.
- Allow to cool completely before slicing for clean cuts. Serve at room temperature or slightly warm.
Notes
- Substitute chopped pecans or walnuts for raisins if preferred.
- For a firmer filling, slightly reduce the amount of syrup used.
- Pie can be made a day ahead and stored at room temperature.
