- 1/2 cup granulated sugar

- 3 large egg whites
- 1/4 tsp cream of tartar
- 6 tbsp granulated sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of the pan. Bake for 10 minutes, then set aside.
- Beat cream cheese and sugar until smooth. Add eggs one at a time. Mix in sour cream, lemon juice, lemon zest, and vanilla extract.
- Pour the cheesecake filling over the crust and bake for 50–60 minutes, or until the center is just set. Let cool completely, then chill for at least 4 hours or overnight.
- Prepare lemon curd by whisking egg yolks, sugar, lemon juice, and zest in a saucepan over medium heat until thickened. Remove from heat and whisk in butter until smooth. Let cool, then spread over chilled cheesecake.
- For the meringue, beat egg whites and cream of tartar until foamy. Gradually add sugar and beat until stiff peaks form. Beat in vanilla extract.
- Spread meringue over the lemon curd layer. Toast with a kitchen torch or broil in the oven for 1–2 minutes until golden.
- Chill for 1 hour before serving for clean slices.
