  • 1 cup basmati or jasmine rice
  • 2 cups water
  • 1 tablespoon butter or olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 tablespoon chopped fresh parsley or cilantro

Instructions

  1. In a small bowl, mix olive oil, lemon juice, garlic powder, paprika, pepper, and salt to create a marinade.
  2. Rub the marinade all over the salmon fillets. Let sit for 10–15 minutes.
  3. Cook the rice: Rinse and drain rice, then bring to a boil with water, garlic powder, salt, and butter/oil. Cover, reduce heat, and simmer for 15 minutes or until cooked. Stir in fresh herbs before serving.
  4. Heat a skillet over medium-high heat. Place salmon skin-side down and cook for 4–5 minutes per side or until golden and cooked through.
  5. Serve the salmon over a bed of hot herb rice. Garnish with chopped parsley and a lemon wedge if desired.
