  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp red chili flakes (optional, for extra spice)
  • 1 garlic clove, minced
  • Juice of 1/2 lime (optional, for brightness)

Instructions

  1. In a medium pot, heat olive oil over medium heat. Add garlic and jalapeño, sauté for 1–2 minutes until fragrant.
  2. Add rice and stir for 1–2 minutes to lightly toast the grains.
  3. Pour in water or broth, and season with salt, pepper, and chili flakes if using. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  5. Stir in pineapple chunks and chopped cilantro. Add lime juice if desired.
  6. Fluff rice with a fork and serve warm as a flavorful side dish.

  • Use canned pineapple for convenience, but fresh adds a brighter flavor.
