Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the almond flour, powdered sugar, and a pinch of salt.
  3. Add the egg whites and almond extract to the mixture and stir until well combined. The dough should be thick and slightly sticky.
  4. With wet hands, form small balls of dough (about 1 inch in diameter) and place them on the prepared baking sheet, spacing them about 2 inches apart.
  5. Gently press pine nuts into the top of each cookie, ensuring they stick into the dough.
  6. Bake for 12-15 minutes, or until the edges of the cookies are golden brown.
  7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
