Description

Tender chunks of chicken marinated in a zesty blend of lemon, garlic, and spices, then grilled to juicy perfection—ideal for backyard barbecues or a quick and healthy meal.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Skewers (wooden skewers soaked in water or metal)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, paprika, oregano, chili powder, salt, and pepper.
  2. Add chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  3. Preheat grill or grill pan to medium-high heat.
  4. Thread marinated chicken onto skewers.
  5. Grill for 4–5 minutes per side, or until chicken is fully cooked and lightly charred.
  6. Remove from grill and let rest for a few minutes.
  7. Garnish with chopped parsley and serve with your favorite dipping sauce or over rice.
