Ingredients:
– 1.5 lbs boneless, skinless chicken thighs
– 1/4 cup olive oil
– 3 cloves garlic, minced
– 1 teaspoon dried oregano
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– Salt and pepper to taste
– 4 pita bread rounds
– 1 cup cherry tomatoes, halved
– 1 cucumber, diced
– 1 red onion, thinly sliced
– Fresh parsley for garnish
Directions:
1. In a bowl, combine olive oil, minced garlic, dried oregano, ground cumin, paprika, salt, and pepper to create a marinade.
2. Add chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour.
3. Preheat grill or grill pan over medium-high heat. Grill marinated chicken thighs for 6-8 minutes per side, or until fully cooked.
4. Let the chicken rest for a few minutes, then slice it into thin strips.
5. Warm the pita bread on the grill for about 1 minute on each side.
6. Assemble the gyros by placing sliced grilled chicken on pita bread and topping with cherry tomatoes, cucumber, red onion, and fresh parsley.
7. Drizzle with tzatziki sauce.
