Description

A refreshing and innovative take on the Italian Caprese Salad, this Frozen Caprese Salad features a tomato granita, whipped burrata, extra virgin olive oil, and herbs—perfect for a light and elegant summer starter.


Ingredients

  • 3 ripe heirloom tomatoes, peeled and chopped
  • 1/2 tsp sugar
  • Salt to taste
  • 1/2 cup burrata or fresh mozzarella, whipped until smooth
  • 2 tbsp extra virgin olive oil
  • Freshly cracked black pepper
  • 1/2 tsp flaky sea salt
  • 1 tsp chopped fresh basil or dried oregano

Instructions

  1. In a blender, purée the tomatoes with a pinch of salt and the sugar until smooth.
  2. Pour the purée into a shallow dish and freeze for 2–3 hours, scraping with a fork every 30 minutes to form a granita texture.
  3. Whip the burrata until light and fluffy. If using mozzarella, blend with a splash of cream until smooth.
  4. To plate, spoon the granita into the center of a chilled plate.
  5. Top with a quenelle or dollop of whipped burrata.
  6. Drizzle with olive oil and finish with cracked pepper, flaky sea salt, and chopped basil or oregano.
  7. Serve immediately while the granita is still frozen.

Notes

  • Use very ripe tomatoes for maximum flavor.
  • Chill serving plates to keep the granita from melting too quickly.
  • For added richness, stir a bit of cream into the burrata before whipping.
  • Serve as a first course at a summer dinner party or elegant brunch.
