Description

  • 1 9-inch pie crust

For the Filling:

  • 2 tbsp butter
  • 3 medium yellow onions, thinly sliced
  • 1 tsp thyme
  • Salt & pepper to taste
  • 3/4 cup heavy cream
  • 2 eggs
  • 1/2 cup grated gruyère or Swiss cheese
  • Pinch of nutmeg

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roll out and press crust into tart pan. Prick base with fork and prebake for 10 minutes.

  3. Sauté onions:
  4. Sauté onions in butter with thyme, salt, and pepper until deeply golden (20–25 mins).

  5. Prepare filling:
  6. In a bowl, whisk cream, eggs, cheese, nutmeg, and season to taste.

  7. Assemble and bake:
  8. Spread caramelized onions into crust. Pour custard over. Bake 30–35 mins until set and golden. Cool slightly before serving.
