Instructions
- Step 1: Caramelize the Onions Heat butter and olive oil in a large skillet over medium-low heat. Add the sliced onions, salt, pepper, sugar, garlic powder, and thyme. Cook slowly, stirring occasionally for 20-25 minutes, until onions are deep golden brown. Pour in 1/2 cup beef broth, stir, and cook for 5 more minutes, until onions are soft and jammy. Remove from heat and set aside.
- Step 2: Prepare the Potato Bake Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter. Layer the sliced potatoes in the bottom of the dish, overlapping them slightly. Spread the caramelized onions evenly over the potatoes. In a bowl, mix together the cream (or milk), salt, pepper, and fresh thyme leaves. Pour this mixture evenly over the potatoes and onions. Sprinkle shredded Gruyère cheese and Parmesan cheese over the top. Cover with foil and bake for 40-45 minutes, or until the potatoes are tender. Remove the foil and bake for another 10-15 minutes, until the cheese is golden and bubbly.
