Ingredients:
1 pound ground chicken
1/4 cup breadcrumbs
1 egg
2 tablespoons fresh cilantro, chopped
1 tablespoon soy sauce
1 teaspoon ginger, grated
1 clove garlic, minced
Salt and pepper to taste
For the Peanut Sauce:
1/2 cup peanut butter
1/4 cup coconut milk
2 tablespoons soy sauce
1 tablespoon lime juice
1 teaspoon brown sugar
1/2 teaspoon ginger, grated
1/4 teaspoon red pepper flakes
Directions:
Preheat oven to 375°F (190°C).
In a bowl, combine ground chicken, breadcrumbs, egg, cilantro, soy sauce, ginger, garlic, salt, and
pepper. Mix well.
Form the mixture into meatballs and place on a baking sheet.
Bake for 20-25 minutes, or until fully cooked.
For the peanut sauce, whisk together peanut butter, coconut milk, soy sauce, lime juice, brown sugar,
ginger, and red pepper flakes in a saucepan over medium heat until smooth.
Serve meatballs with peanut sauce drizzled on top or on the side for dipping.
