Instructions
- Preheat a grill to medium-high heat. Grill corn, turning occasionally, until charred and cooked through, about 7–10 minutes.
- In a small bowl, mix together mayonnaise, sour cream, garlic (if using), and lime juice.
- Brush the warm corn evenly with the creamy mixture.
- Sprinkle generously with crumbled cotija cheese.
- Dust each ear with chili powder and smoked paprika.
- Garnish with chopped cilantro if desired, and serve with lime wedges on the side.
