Description

Eggplant Pizza Bites are a healthy, low-carb alternative to traditional pizza. Roasted eggplant rounds are topped with marinara sauce, melted mozzarella, cherry tomatoes, and black olives, making them a delicious and gluten-free appetizer or snack.


Ingredients

  • 2 medium eggplants, sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes, sliced
  • 1/4 cup black olives, sliced
  • 1 teaspoon dried oregano
  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
  3. Arrange the slices on the baking sheet and roast for 15 minutes, flipping halfway through.
  4. Remove from oven and top each eggplant slice with a spoonful of marinara sauce, a sprinkle of mozzarella, a few cherry tomato slices, and black olives.
  5. Return to the oven and bake for another 10–12 minutes, or until the cheese is melted and bubbly.
  6. Sprinkle with oregano and garnish with fresh basil before serving.
