Eggplant Pizza Bites are a healthy, low-carb alternative to traditional pizza. Roasted eggplant rounds are topped with marinara sauce, melted mozzarella, cherry tomatoes, and black olives, making them a delicious and gluten-free appetizer or snack.

- 2 medium eggplants, sliced into 1/2-inch rounds
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1/2 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup cherry tomatoes, sliced
- 1/4 cup black olives, sliced
- 1 teaspoon dried oregano
- Fresh basil leaves (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
- Arrange the slices on the baking sheet and roast for 15 minutes, flipping halfway through.
- Remove from oven and top each eggplant slice with a spoonful of marinara sauce, a sprinkle of mozzarella, a few cherry tomato slices, and black olives.
- Return to the oven and bake for another 10–12 minutes, or until the cheese is melted and bubbly.
- Sprinkle with oregano and garnish with fresh basil before serving.

- Use a mandoline for evenly sliced eggplant rounds.
- Swap mozzarella for dairy-free cheese to make it vegan.
- Add crushed red pepper for a spicy kick.
