A fun, protein-packed twist on the classic BLT, these sliders replace bread with hard-boiled egg halves or mini buns, layered with crispy bacon, juicy tomato slices, and fresh greens—perfect for brunch bites or low-carb snacking.


Ingredients

  • 6 strips of bacon, cooked until crisp
  • 1 large tomato, sliced into 6 rounds
  • 1 cup baby arugula or spinach

  • 6 slider buns (optional, for bun-style version)
  • Everything bagel seasoning (optional, for bun version)
  • Skewers or toothpicks, for assembling

Instructions

  1. Slice the hard-boiled eggs in half lengthwise. If using slider buns, toast them lightly.
  2. On each egg half or bun bottom, layer with a dab of mayo (if using), baby greens, one half-slice of bacon, and a tomato round.
  3. Top with the other egg half or bun top. Secure with a skewer or toothpick.
  4. Sprinkle with salt, pepper, and bagel seasoning if desired.
  5. Serve immediately, chilled or at room temperature.
