Outrageously fudgy and rich, these thick chocolate cookies are stuffed with a molten ganache center and bursting with colorful rainbow chips. With a soft, brownie-like texture and playful cosmic flair, they’re ideal for parties, gifting, or indulgent treats.

- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips (for ganache)
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tbsp vanilla extract
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup mini rainbow candy chips (Cosmic Chips or rainbow M&Ms)
- 1/2 cup chocolate chunks or chips
Instructions
- Heat the heavy cream until just boiling. Pour it over the chocolate chips in a bowl and let sit for 1 minute. Stir until smooth to form ganache.
- Refrigerate the ganache for 1 hour or freeze in small dollops on parchment until firm.
- Cream the butter, brown sugar, and granulated sugar together until fluffy. Beat in the eggs and vanilla extract.
- In a separate bowl, sift together flour, cocoa powder, baking soda, and salt. Gradually mix into the wet ingredients.
- Fold in rainbow chips and chocolate chunks. Chill the dough for 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop portions of dough, flatten slightly, and place a firm ganache dollop in the center. Wrap the dough around to seal completely.
- Optional: Roll dough balls in additional rainbow chips.
- Bake for 10–12 minutes until the edges are set but centers remain soft.
- Let cookies cool on the baking tray for 5 minutes before transferring to a wire rack.
Notes
- Freeze ganache in advance for easier stuffing and less mess during baking.
- Do not overbake—cookies will continue to cook slightly after removal from oven.
- Store in an airtight container for up to 4 days or freeze for longer storage.
