Description

Outrageously fudgy and rich, these thick chocolate cookies are stuffed with a molten ganache center and bursting with colorful rainbow chips. With a soft, brownie-like texture and playful cosmic flair, they’re ideal for parties, gifting, or indulgent treats.


Ingredients

  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips (for ganache)
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup mini rainbow candy chips (Cosmic Chips or rainbow M&Ms)
  • 1/2 cup chocolate chunks or chips

Instructions

  1. Heat the heavy cream until just boiling. Pour it over the chocolate chips in a bowl and let sit for 1 minute. Stir until smooth to form ganache.
  2. Refrigerate the ganache for 1 hour or freeze in small dollops on parchment until firm.
  3. Cream the butter, brown sugar, and granulated sugar together until fluffy. Beat in the eggs and vanilla extract.
  4. In a separate bowl, sift together flour, cocoa powder, baking soda, and salt. Gradually mix into the wet ingredients.
  5. Fold in rainbow chips and chocolate chunks. Chill the dough for 30 minutes.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop portions of dough, flatten slightly, and place a firm ganache dollop in the center. Wrap the dough around to seal completely.
  8. Optional: Roll dough balls in additional rainbow chips.
  9. Bake for 10–12 minutes until the edges are set but centers remain soft.
  10. Let cookies cool on the baking tray for 5 minutes before transferring to a wire rack.

Notes

  • Freeze ganache in advance for easier stuffing and less mess during baking.
  • Do not overbake—cookies will continue to cook slightly after removal from oven.
  • Store in an airtight container for up to 4 days or freeze for longer storage.
