Ingredients

  • 1/2 cup hazelnut spread (like Nutella)
  • 1/4 cup finely chopped toasted hazelnuts
  • 1/2 cup crushed wafer cookies
  • 1/2 cup semisweet or dark chocolate chips
  • 1 tablespoon coconut oil (optional, for smoother coating)
  • 3/4 cup crispy rice cereal

Instructions

  1. In a bowl, mix hazelnut spread, chopped hazelnuts, and crushed wafers until combined.
  2. Scoop small amounts of mixture and roll into 1-inch balls. Place on a parchment-lined tray and freeze for 20 minutes to firm up.
  3. In a microwave-safe bowl, melt chocolate chips with coconut oil in 20-second intervals, stirring until smooth.
  4. Place crispy rice cereal in a shallow dish.
  5. Dip each chilled truffle into melted chocolate, then roll in crispy rice cereal to coat.
  6. Place back on tray and refrigerate for 15–20 minutes until set.
