  • 1/2 cup dark chocolate chips + extra for topping
  • 1/2 cup semi-sweet chocolate chips + extra for topping
  • 1 tablespoon all-purpose flour (for dusting chocolate chips)

Optional Topping:

  • 1/4 banana (cut into thin slices)
  • 1 teaspoon granulated sugar

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Prepare dry ingredients: In a bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder.
  3. Mix wet ingredients: In another bowl, blend olive oil, brown sugar, granulated sugar, eggs, vanilla, and sour cream.
  4. Combine wet and dry ingredients: Fold in mashed bananas and mix in dry ingredients until just combined.
  5. Add chocolate chips: Dredge chocolate chips in flour, fold into batter, and pour into loaf pan.
  6. Top and bake: Sprinkle extra chocolate chips on top, add banana slices, and bake for 55-65 minutes.
  7. Caramelize topping: Optionally, caramelize banana slices with sugar using a kitchen torch.
