Ingredients:
1 tbsp olive oil
250g (½lb) mushrooms, sliced
2 tbsp butter
2 garlic cloves, crushed
½ tsp chili flakes (optional)
1 tsp dried oregano
1 tsp lemon juice
Salt and pepper to taste
8 slices sourdough bread
1 cup mozzarella cheese, grated
1 cup mature or sharp cheddar cheese, grated
Extra butter for grilling
Directions:
Heat olive oil in a pan over medium-high heat. Add mushrooms and sauté until golden.
Add butter, garlic, chili flakes, and oregano to the pan. Cook until fragrant.
Season with lemon juice, salt, and pepper. Set aside.
Mix mozzarella and cheddar cheese in a bowl.
Lay out 4 slices of bread. Top with a mix of cheeses, then mushrooms, and cover with another slice of
bread.
Butter the outside of the sandwiches and grill on a preheated pan until golden brown on both sides and
the cheese is melted.
