Description

Ultra creamy scalloped potatoes baked in layers with garlic, three cheeses, sour cream, and a bold Cajun kick—perfect as a hearty side dish or comforting vegetarian main.


Ingredients

  • 5 lbs Russet potatoes, sliced 1/8″ thick
  • 2 cups onions, chopped small
  • 6 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 1/2 cups vegetable broth
  • 1 1/2 cups heavy cream
  • 1 tbsp salt
  • 2 tsp black pepper
  • 2 tsp Cajun seasoning (like Slap Ya Mama®)
  • 8 oz sour cream
  • 3 cups cheddar cheese, grated (divided)
  • 1 cup pepper jack cheese, grated
  • 1 cup Parmesan cheese, freshly grated

Instructions

  1. Preheat oven to 400°F (204°C). Spray a 14 x 11½ x 2¼ inch baking dish with nonstick spray and set aside.
  2. Peel and slice potatoes to ⅛” thickness. Place in a large bowl of cold water to prevent browning.
  3. In a large skillet, melt butter over medium heat. Add onions and garlic; sauté 4–5 minutes until softened.
  4. Sprinkle flour over onions; stir and cook for 2 minutes.
  5. Slowly pour in vegetable broth, stirring constantly. Add heavy cream, salt, pepper, and Cajun seasoning. Cook until thickened (do not boil).
  6. Stir in 2 cups cheddar cheese until melted. Remove from heat.
  7. Layer ⅓ of potatoes in the baking dish, top with ⅓ sour cream and ⅓ cheese sauce.
  8. Sprinkle with ⅓ Parmesan, ⅓ pepper jack, and ⅓ remaining cheddar.
  9. Repeat layers two more times, finishing with cheddar on top.
  10. Cover with foil and bake for 1½–2 hours, depending on potato thickness.
  11. Remove foil for last 15–20 minutes to brown cheese.
  12. Let sit 15 minutes before serving.
