A fiery, flavor-packed salmon roasted in a rich Calabrian chili garlic butter, surrounded by sweet cherry tomatoes and shallots, perfect for spice lovers and elegant enough for any occasion.

- 1 salmon fillet (about 1–1.5 lbs)
- 2 tbsp unsalted butter, melted
- 1 tbsp Calabrian chili paste
- 2 garlic cloves, minced
- Zest and juice of 1 lemon
- Salt and black pepper, to taste
- 1 cup cherry tomatoes, halved
- 1 shallot, thinly sliced
- 2 tbsp olive oil
- 2 tbsp chopped fresh parsley or scallions (for garnish)
- Lemon wedges, to serve
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment or lightly grease it.
- In a small bowl, whisk together melted butter, Calabrian chili paste, minced garlic, lemon zest, lemon juice, salt, and pepper.
- Place the salmon on the prepared baking sheet and pour the chili garlic butter over the top.
- Toss cherry tomatoes and shallots with olive oil, salt, and pepper. Scatter around the salmon on the baking sheet.
- Roast for 15–18 minutes, or until the salmon is cooked through and flakes easily.
- Garnish with chopped fresh parsley or scallions and serve with lemon wedges.
Notes
- Adjust the amount of Calabrian chili paste to your desired level of spiciness.
- For a more intense flavor, marinate the salmon in the chili garlic butter mixture for 15–20 minutes before roasting.
- Serve with a side of roasted vegetables or over a bed of rice for a complete meal.
