Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until smooth.
- Gradually add flour and almond meal (if making almond cookies), and combine until the dough forms.
- Roll the dough into small balls, flatten slightly, and place them on the prepared baking sheet.
