Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until smooth.
  4. Gradually add flour and almond meal (if making almond cookies), and combine until the dough forms.
  5. Roll the dough into small balls, flatten slightly, and place them on the prepared baking sheet.
  6. For jam-filled cookies, create a small indentation in the center of each cookie, then fill with raspberry jam.
  7. Bake for 10-12 minutes or until golden brown on the edges.
