Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a saucepan, melt butter over medium heat. Add apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5–7 minutes until apples are tender. Stir in cornstarch and cook for 1 more minute until thickened. Remove from heat and cool slightly.
  3. Cut puff pastry into 4 equal squares. Spoon apple filling into the center of each square.
  4. Fold corners up over the filling to create a loose pocket, pinching gently to secure.
  5. Brush tops with egg wash and sprinkle with sugar.
  6. Bake for 20–22 minutes or until golden brown and puffed.
  7. Let cool for 5 minutes, then top each turnover with a scoop of vanilla ice cream and a drizzle of caramel sauce.

Notes

  • For a richer filling, try adding a handful of raisins or chopped walnuts to the apple mixture.
  • For a golden, shiny finish, brush the egg wash on the turnovers before baking.
