Salisbury Meatballs with Mashed Potatoes

 

Ingredients:

For The Meatballs

500g ground beef

¼ cup breadcrumbs (Panko recommended)

1 tbsp tomato ketchup

1 tsp Worcestershire sauce

½ tsp salt

1 tsp ground black pepper

1 garlic clove, grated

½ onion, grated

2 tbsp olive oil

For Gravy

2 tbsp butter

1 large onion, sliced

1 garlic clove, grated

2 cups beef stock

2 tbsp plain flour

1 tbsp tomato ketchup

1 tbsp BBQ sauce

1 tsp smoked paprika

½ tsp freshly cracked black pepper

Salt to taste

For Mashed Potatoes

5 large potatoes, peeled and boiled until tender

4 tbsp salted butter

½ cup milk (low-fat recommended)

Salt and black pepper to taste

Directions:

Meatballs: Mix all ingredients (except olive oil) in a large bowl. Shape into 1-inch balls. Heat olive oil in a skillet over

medium-high heat, cook meatballs until browned on all sides. Remove and set aside.

Gravy: In the same skillet, melt butter, add onion, cook until translucent. Stir in flour and garlic, cook 1 minute. Gradually

whisk in beef stock, cook until thickened. Add ketchup, BBQ sauce, paprika, salt, and pepper. Adjust thickness with stock if

necessary. Return meatballs to skillet, coat with sauce, simmer 1 minute.

Mashed Potatoes: Mash potatoes with milk, butter, salt, and pepper until smooth.
